Well, it finally has happened, I started a Blog!! My first post is a welcoming post and I am so excited to get this going. Thank you to everyone that has stopped by to check it out and hope you continue to come by and read up!

Now with that being said, I am also excited that fall is here, well technically its been here a few weeks, but nonetheless I am still excited. Since we still have so much to do in our house I didn't get to decorate as much as I would have wanted to for fall but I did do a few things. I happened to make a wreath for our front porch and added a few extra things to get in the spirit.



The weather is terrible so a day in the house being lazy it is! Nothing is better than baking to get into the spirit for seasons and holidays. I love each season and holiday because there is something different you can bake for each! So I gave it some thought and decided I would bake some items to take up to the Boyfriends work, he is a Paramedic/ Firefighter, and the guys at his station love to eat. I love to bake but I would rather take it there then have all this yumminess here at the house tempting me each time I walk by to eat it!

Tis' the season for Pumpkin! I know that everyone has seen all the stores transform into everything pumpkin spice! I even saw Dog Treats at HEB the other day that were Pumpkin Spice! Crazy! Well I decided to take a twist on a classic and make Pumpkin Spice Rice Krispie Treats.



Pumpkin Spice Rice Krispie Treats Recipe

4 Cups Mini Marshmallows
6 Cups Rice Krispie Cereal
1/2 tsp. Cinnamon
1/2 tsp. Pumpkin Pie Spice
1/4 Cup Pumpkin Puree
3 Tbsp. Butter

1.  First thing that needs to be done is to place the pumpkin puree between several paper towels to get rid of all that moisture in it. I let mine sit for about 20 mins. 


2. In a large saucepan, melt butter on medium/low heat and once melted add the Marshmallows.




3. Once marshmallows are melted, add pumpkin puree, cinnamon and pumpkin pie spice to the mixture.

4. Next, in goes the Rice Krispie Cereal. Stir until all is evenly coated.



5. Pour the Rice Krispie Mix into a 9x13 greased baking pan (I greased with a little bit of butter). Using your hands push down on the mixture shape to the pan.



6. Let the Rice Krispie Treats Cool then cut and enjoy. I would recommend storing in an airtight container but I am sure they won't last long!



Since I only used 1/4 Cup of Pumpkin Puree, I had a lot left and decided to bake a Chocolate Chip Pumpkin Bread as well. Nothing says fall like Pumpkin Bread! 




Chocolate Chip Pumpkin Bread Recipe

1 and 3/4 Cups All Purpose Flour
1tsp. Baking Soda
1/2 tsp Pumpin Pie Spice ( I add a little extra, I love Pumpkin Spice)
3/4 tsp. Salt
2 Large Eggs
3/4 Cup Granulated Sugar
1/2 Cup Brown Sugar ( Light or Dark)
1 and a 1/2 Cups Pumpkin Puree
1/2 Cup Oil Either Vegetable, Canola or Coconut ( I used coconut, just have to melt it)
1/4 Cup Orange Juice
2/3 Cup Semi Sweet Chocolate Chips

1. Preheat Oven to 350F degrees. Spray a 9x5 inch loaf pan with non-stick spray and set aside.


2. In a large mixing bowl,  whisk flour, baking soda, salt and pumpkin pie spice until combined.


3.  In a medium mixing bowl, whisk the eggs granulated sugar, and brown sugar until combined. Whisk in the pumpkin puree, oil, and orange juice. 



4. Pour the wet ingredients into the dry ingredients and gently mix together using a spatula or wooden spoon. A few lumps is fine, just don't overmix!! 


5. Gently fold in the chocolate chips. You don't have to add chocolate chips, you could omit this completely or try adding some of your faves like pecans or walnuts or even white chocolate chips. My boyfriend loves chocolate chips so I knew this step couldn't be omitted. 


6. Pour the batter into the prepared loaf pan. Baking time is 60-65 mins. I timed mine for 30 then placed a piece of aluminum foil on the top to keep the top from getting too brown then timed it for another 30 minutes and it was done. The house will start to smell amazing at this point but you are only half way done! Cooling takes forever! I inserted a toothpick and it came out clean with a few crumbs so I knew it was ready!


7. Allow the bread to cool completely before cutting into it. Once sliced I would recommend storing in an airtight container.  Soooo good!! Warm or room temperature!! Enjoy!



Now that I have everything ready, time to pack it up and take it to a bunch of hungry firemen for a Happy Halloween treat, weather permitting!  Im sure it won't last long!
